Classic Mexican enchiladas filled with tender chicken, smothered in a rich red sauce and melted cheese.

  • • 2 cups red enchilada sauce
  • • 1 1/2 cups shredded Monterey Jack cheese
  • • 1/2 cup chopped onion
  • • 8 corn tortillas
  • • 1/2 cup sour cream (for serving)
  • • 1/4 cup chopped fresh cilantro
  • • Salt and pepper to taste

Preheat oven to 375°F (190°C).
In a bowl, mix chicken, 1/2 cup enchilada sauce, 1/2 cup cheese, onion, salt, and pepper.
Warm tortillas until pliable. Fill each with chicken mixture, roll up, and place seam-side down in a baking dish.
Pour remaining enchilada sauce over tortillas and sprinkle with remaining cheese.
Bake 20-25 minutes until cheese is melted and bubbly.
Garnish with sour cream and cilantro before serving.
