  • • 2 lbs beef chuck, cut into 1-inch cubes
  • • 2 tbsp olive oil
  • • 2 large onions, chopped
  • • 3 cloves garlic, minced
  • • 2 tbsp sweet Hungarian paprika
  • • 1 tsp caraway seeds
  • • 1/2 tsp black pepper
  • • 1 tsp salt
  • • 2 tbsp tomato paste
  • • 4 cups beef broth
  • • 2 large carrots, sliced
  • • 2 bell peppers, chopped
  • • 2 medium potatoes, peeled and cubed
  • • 1 bay leaf
  • • Fresh parsley for garnish

Heat olive oil in a large pot over medium heat. Add onions and cook until soft.
Add garlic and cook for 1 minute. Stir in paprika and caraway seeds.
Add beef cubes and brown on all sides.
Stir in tomato paste, salt, and pepper.
Pour in beef broth, add bay leaf, and bring to a simmer.
Cover and cook on low heat for 1 hour.
Add carrots, bell peppers, and potatoes. Simmer uncovered for another 45-60 minutes, until beef and vegetables are tender.
Remove bay leaf. Adjust seasoning if needed.
Serve hot, garnished with fresh parsley.
