  • • 1 cup cherry tomatoes, halved
  • • 1 cucumber, diced
  • • 1/2 cup kalamata olives, sliced
  • • 1/4 cup red onion, finely chopped
  • • 1/2 cup feta cheese, crumbled
  • • 2 tbsp olive oil
  • • 2 tbsp lemon juice
  • • 1 tsp dried oregano
  • • Salt and pepper to taste

Rinse quinoa and cook with water according to package instructions. Let cool.
In a large bowl, combine quinoa, tomatoes, cucumber, olives, onion, and feta.
Whisk together olive oil, lemon juice, oregano, salt, and pepper.
Pour dressing over salad, toss, and serve chilled.
