A rich, creamy mousse with cinnamon and a hint of chili, inspired by Mexican chocolate.

  • • 6 oz bittersweet chocolate, chopped
  • • 3 large eggs, separated
  • • 1/4 cup sugar
  • • 1 cup heavy cream
  • • 1/2 tsp ground cinnamon
  • • 1/8 tsp cayenne pepper (optional)
  • • 1/2 tsp vanilla extract
  • • Pinch of salt

Melt chocolate in a heatproof bowl over simmering water. Cool slightly.
Whisk in egg yolks, cinnamon, cayenne, and vanilla.
Beat egg whites with salt to soft peaks, then add sugar and beat to stiff peaks.
Whip cream to soft peaks.
Fold egg whites into chocolate, then fold in whipped cream.
Spoon into cups and chill at least 2 hours before serving.
