  • • 1 onion, diced
  • • 2 garlic cloves, minced
  • • 1 tbsp ginger, grated
  • • 1 red bell pepper, sliced
  • • 1 can chickpeas, drained
  • • 1 can coconut milk
  • • 2 tbsp red curry paste
  • • 1 tbsp soy sauce
  • • 2 cups spinach
  • • Juice of 1 lime
  • • Fresh cilantro for garnish

Heat coconut oil in a pan. Sauté onion, garlic, and ginger until fragrant.
Add bell pepper and cook for 2 minutes.
Stir in chickpeas, coconut milk, curry paste, and soy sauce. Simmer 10 minutes.
Add spinach and lime juice, cook until wilted.
Serve with rice, topped with cilantro.
