Heat olive oil in a large pot over medium heat. Add onions and cook until soft.
Add garlic and cook for 1 minute. Stir in paprika and caraway seeds.
Stir in tomato paste, salt, and pepper.
Pour in vegetable broth, add bay leaf, and bring to a simmer.
Add carrots, bell peppers, potatoes, and zucchini. Simmer uncovered for 30-40 minutes, until vegetables are tender.
Add kidney beans and cook for 10 more minutes.
Remove bay leaf. Adjust seasoning if needed.
Serve hot, garnished with fresh parsley.
